Vegetarian Sausage, Sage, Onion & Apple Cider Pie

This comforting, flavourful pie is ideal for chillier weather and adds a delightful vegetarian twist to classic flavours!
Ingredients
- 1 Jus Rol puff pastry sheet
- 2 red onions, diced
- 1 whole pre-roasted butternut squash, cubed
- 6 vegetarian sausages, cut into chunks
- 2 tablespoons sage and onion stuffing mix
- 1/2 vegetable stock cube, dissolved in water
- 1/2 medium Cox apple, chopped
- 1 teaspoon mustard
- 4 garlic cloves, minced
- Black pepper, to taste
- Half a pint of cider
- Oil and butter for cooking
- 1 egg for egg wash

Method
- Preheat the Oven: Set your oven to 180°C (356°F).
- Cook the Sausages: In a pan, heat some oil over medium heat. Add the sausage chunks and cook until browned. Remove and set aside.
- Cook the Vegetables: In the same pan, add a bit of butter and fry the diced onions until soft. Then, add the pre-roasted butternut squash and cook for a few minutes.
- Make the Sauce: Sprinkle some flour into the pan and stir. Add the cooked sausages back in, along with minced garlic, cider, mustard, pepper, and the sage and onion stuffing mix. Cook on low to medium heat for 3 minutes.
- Add Stock and Apple: Pour in the vegetable stock and add the chopped apple. Let it simmer for 2 minutes.
- Assemble the Pie: Unroll the Jus Rol puff pastry over the pan, covering the sausage and vegetable mixture. Make a small hole in the middle of the pastry and prick the sides with a fork.
- Bake: Brush the pastry with egg wash for a golden finish (optional). Bake in the preheated oven for 15-20 minutes or until the pastry is puffed up and golden brown.
- Serve: Enjoy this hearty pie on its own, or pair it with garlic mashed potatoes and gravy for a more indulgent meal.
