Hoisin Marinade for Pulled Chicken

Method

  1. Preheat oven to 200°C (Fan assisted 180°C).
  2. Make 500ml chicken stock and add to a small saucepan with 1 minced garlic clove and the chicken breast. Simmer for around 15 minutes, or until chicken is cooked.
  3. Meanwhile, make the hoisin marinade by adding the following ingredients in a large bowl and mixing well: 60ml store-bought hoisin sauce, 15ml soy sauce, 15ml rice vinegar, 1 tsp honey, and 1 tsp sesame oil. If you need to make your marinade a bit runnier than add water a tsp at a time until your desired consistency.
  4. Once chicken is cooked, remove from the saucepan and shred using 2 forks. Then coat the shredded chicken in the marinade.
  5. Whilst the chicken is marinating, unroll the dough and place it on a tray lined with non-stick baking paper.
  6. Open the tomato sauce jar and spread the sauce uniformly over the dough.
  7. Tear up your mozzarella ball into small pieces and spread evenly across the dough, along with the marinated chicken.
  8. Place the tray on the middle shelf of the oven and bake for 15 minutes or until golden brown.
  9. Whilst the pizza is cooking, make your cucumber slivers by using a vegetable peeler to carefully slice the cucumber lengthways into long, thin ribbons.
  10. Slice your spring onions and pull off some coriander leaves for the garnish.
  11. Once the pizza is cooked, remove it from the oven and add your spring onion, cucumber slivers and coriander.
  12. Finish with a drizzle of hoisin sauce and serve immediately!
